Rotel Chicken Casserole
One of our favorite dishes in the Evans of North Carolina household is rotel chicken casserole. I learned about this recipe from my mom. She made it for my brother and me several years ago. I started making it about six years ago for my friends. It became a quick favorite. You can imagine how happy I was when I first made it for Tony and he loved it!
The recipe makes enough for 8-9 people, but we cut it in half when it’s just the two of us. It is almost as good reheated.
1 bag large, extra wide egg noodles
1/2 block velveeta cheese, cut in small squares
1 cup milk
1 can cream of celery soup (or cream of chicken)
1 can rotel (mild, medium or hot)
2-3 large chicken breasts
Preheat over to 350 degrees. Cook noodles and bake chicken before putting casserole together. Chop the chicken into small pieces. Mix together and place all ingredients into a 9×13 glass baking dish. Place in preheated oven and bake for 30 minutes.
